Ingredients


2 tsp extra virgin olive oil
2 T sweet potato puree or pumpkin puree
½ cup black beans, drained and rinsed
2 T sweet corn (fresh/frozen/canned)
1 pinch turmeric powder
1 pinch taco seasoning (cumin, oregano, chili powder)
1 pinch fine grain sea salt
1/8 lime, zest and juice
2 corn tortillas (6-inch)
1 T mexican cheese, cheddar, or your favorite!
1 sprig chopped cilantro leaves
1 can tomato sauce
